Halkidiki sesame pie with Muses Honey
Instructions
Carefully toast the sesame seeds in an oven or frying pan: we want it to get some color but not be overcooked, because it will get bitter. Then use a mortar and pestle or a blender to grind it. Spread 2 filo pastry sheets on the base of a pan, grease well with olive oil, and pour over the mixture, which contains the sesame, cinnamon, cloves and breadcrumbs.
Add another sheet, grease with olive oil and sprinkle some more filling. We will use all the sheets this way, layering, oiling and sprinkling until there are only two sheets left at the end. Make sure there is excess filo pastry on both sides of the pan. When we are left with the two last sheets, grease with oil and wrap the excess filo pastry around the edges of the pan, so as to give it a beautiful shape.
Carve into pieces before baking and sprinkle with a little water. Bake in a preheated oven for one hour at 170 degrees Celsius. Meanwhile, place the honey and water in a saucepan and boil for 10 minutes until a syrup is made. When our sesame pie comes hot out of the oven, the syrup should have already cooled. Gradually add the cold syrup to the hot sesame pie until it is completely absorbed. Serve each piece of our sesame pie with a little honey on top.

- 500gr sesame
- 450gr filo pastry
- 3 tablespoons breadcrumbs
- 2 tablespoons ground cinnamon
- 1 tablespoon cloves
- 150ml olive oil
For the syrup
- 450gr Muses Honey
- 450gr water
